Vegetarian Three Bean Chili With Rice And Coriander

Ingredients

  • 28oz Beans In Tomato Sauce
  • 1 Can (28 Oz) Black Beans
  • 1 Can (28 Oz) Compliments Kidney Beans Dark Red
  • 1 Can (28 Oz) Compliments Diced Tomatoes
  • 1 Cup Tomato Juice
  • 1 Medium Green Bell Pepper, Diced
  • 1 Medium Red Bell Pepper, Diced
  • 2 Cups Button Mushrooms, Chopped
  • 2 Cups Frozen Corn
  • 3 Cups Cooked Rice
  • 2 Tbsp Chili Powder
  • 1 Tbsp Chili Sauce
  • 1 Tsp Black Pepper
  • 1.2 Tsp Dried Basil Or 2 tbsp Chopped Fresh
  • 1 Cup Cheddar Cheese, Shredded

Directions:

  • Combine the beans, tomatoes and tomato juice in the pot. Bring to a simmer.
  • Add the bell peppers, mushrooms and corn. Simmer for 5 to 6 minutes or until the peppers are tender.
  • Add the remaining ingredients, except for the cheese. Heat thoroughly. Serve with the cheese sprinkled on top.
