Vegetarian Three Bean Chili With Rice And Coriander
Ingredients
- 28oz Beans In Tomato Sauce
- 1 Can (28 Oz) Black Beans
- 1 Can (28 Oz) Compliments Kidney Beans Dark Red
- 1 Can (28 Oz) Compliments Diced Tomatoes
- 1 Cup Tomato Juice
- 1 Medium Green Bell Pepper, Diced
- 1 Medium Red Bell Pepper, Diced
- 2 Cups Button Mushrooms, Chopped
- 2 Cups Frozen Corn
- 3 Cups Cooked Rice
- 2 Tbsp Chili Powder
- 1 Tbsp Chili Sauce
- 1 Tsp Black Pepper
- 1.2 Tsp Dried Basil Or 2 tbsp Chopped Fresh
- 1 Cup Cheddar Cheese, Shredded
Directions:
- Combine the beans, tomatoes and tomato juice in the pot. Bring to a simmer.
- Add the bell peppers, mushrooms and corn. Simmer for 5 to 6 minutes or until the peppers are tender.
- Add the remaining ingredients, except for the cheese. Heat thoroughly. Serve with the cheese sprinkled on top.
