Swishy Brie And Leek Salad

Ingredients

  • 1 Lb Penne
  • 1/4 Cup Compliments Extra Virgin Olive Oil
  • 1/2 Cup Shallots, Chopped
  • 2 Cups Leeks, Julienned
  • 2 Tbsp Fresh Rosemary, Chopped
  • 1 Cup Compliments Sensations Prosciutto, Julienned
  • 1/2 Cup White Wine
  • 1 Cup Peas
  • 1/2 Lemon, Zested and Juiced
  • 2 Oz Brie Cheese, Chopped
  • 1/2 Cup Fresh Parsley, Chopped
  • Salt And Pepper To Taste
  • 1 Head Arugula

Directions:

  • In a large saucepan sauté shallots in the olive oil for a minute, then add leeks and rosemary and cook until soft.
  • Add prosciutto, wine, peas and lemon juice and zest. Sauté for 2 to 3 minutes.
  • Wash and dry the arugula, then arrange it on your serving platter or bowl.
  • Add Brie and parsley. Season with salt and a lot of freshly ground pepper and you're ready to serve.
