Swishy Brie And Leek Salad
Ingredients
- 1 Lb Penne
- 1/4 Cup Compliments Extra Virgin Olive Oil
- 1/2 Cup Shallots, Chopped
- 2 Cups Leeks, Julienned
- 2 Tbsp Fresh Rosemary, Chopped
- 1 Cup Compliments Sensations Prosciutto, Julienned
- 1/2 Cup White Wine
- 1 Cup Peas
- 1/2 Lemon, Zested and Juiced
- 2 Oz Brie Cheese, Chopped
- 1/2 Cup Fresh Parsley, Chopped
- Salt And Pepper To Taste
- 1 Head Arugula
Directions:
- In a large saucepan sauté shallots in the olive oil for a minute, then add leeks and rosemary and cook until soft.
- Add prosciutto, wine, peas and lemon juice and zest. Sauté for 2 to 3 minutes.
- Wash and dry the arugula, then arrange it on your serving platter or bowl.
- Add Brie and parsley. Season with salt and a lot of freshly ground pepper and you're ready to serve.
