Strawberry Fields Forever

Ingredients

  • 5 - 6 Cups Stock
  • 1/4 Cup Butter
  • 1 Cup Onions, Chopped
  • 1/4 Cup Fresh Thyme, Chopped
  • 2 Cups Compliments Arborio Rice
  • 1 Cup White Wine Or Pernod
  • 3/4 - 1 Cup Compliments Parmesan Cheese, Grated
  • Salt And Pepper To Taste
  • 2 Cups Asparagus, Chopped
  • 2 Cups Strawberries, Halved
  • 1/4 Cup Asiago Cheese, Shredded

Directions:

  • Heat your stock and keep it just simmering on the stove ready to go.
  • In a large saucepan over medium-low heat sauté the onions and thyme in butter until the onions are soft.
  • Add the Compliments arborio rice and stir it well in the onion and butter mixture. Cook for 3 minutes. Add the white wine and allow it to boil away slightly, approximately 2 to 3 minutes.
  • Now we begin the fun stuff. The trick with risotto is you have to constantly move it around - preferably with a flat-ended wooden spoon - to make sure the liquid is properly absorbed. So what we do is add 1 cup of hot stock at the beginning plus 1 tbsp of the Parmesan, then - keep stirring! - let it absorb completely.
  • When it's all absorbed, stir in 1/2 cup of stock and 1 tbsp of Parmesan. Let that absorb completely, and do it all over again. Salt and pepper as you go....
  • Add your asparagus when you've used half your stock.

    DON'T FREAK OUT IF YOU USE A LOT OF STOCK. These short fat grains of arborio absorb a HECK OF A LOT of liquid.
  • When the rice is almost done and you have approximately 1 cup of stock left, stir in the strawberries, 1/2 cup of the stock and 1 tbsp Parmesan and continue stirring until your rice is soft and creamy outside, with a bit of a bite inside.
  • Just before serving stir in the Asiago cheese. YUMMY. Serve warm and enjoy.
  • You may have some stock left over, or have to add more, depending on the type of arborio you use (and of course the attitude!).
