Savoury Cornbread
Ingredients
- 1/2 Cup All Purpose Flour
- 1 1/2 Cups Cornmeal
- 1 Tbsp Baking Powder
- 1 Cup Cheddar Cheese, Shredded
- 1 Cup Smoked Gouda, Shredded
- 1 Roasted Red Pepper, Chopped
- 1/4 Cup Butter, Melted
- 1/2 Cup Milk
- 2 Eggs, Beaten
- 1 Cup Sour Cream
- 1 Cup Corn
- 1/4 Cup Fresh Thyme, Chopped
- 1/2 Cup Green Onion, Chopped
- 1 Tbsp Jalapeno, Finely Chopped
- Salt And Pepper To Taste
Directions:
- Preheat oven to 350 degrees. Grease a 9" x 9" baking dish.
- In a medium bowl, mix well the flour, cornmeal and baking powder.
- In a large bowl mix together the cheddar, smoked Gouda, roasted pepper, melted butter, milk, eggs, sour cream, corn, thyme, green onions, jalapeno and salt and pepper. Combine well.
- Add the dry ingredients and mix well.
- Pour the batter into the baking dish. Bake for 40 to 45 minutes, until cooked. To test doneness, poke with a toothpick, or knife, and if it comes out dry, she's ready! Serve warm or at room temperature.
