Episode #13 - Sangita and Rekha
Ingredients:
Fish Marinade
- Salmon Steaks
- 2 tbsp mustard oil
- 1/2 tsp onion seeds
- 1/4 tsp fenugreek seeds
- 1/2 mustard seeds
- 2 kashmiri chillis and 1 whole chilli (crushed)
- 1 garlic clove sliced
- 1/2 inch ginger sliced
- 1/2 tsp turmeric
- 1/2 tsp garam masala
- 1/4 onion chopped
- 1-2 tbsp coconut
- 1/2 tsp ground coriander
- 1/2 cup yogurt
- Salt
Couscous Medley

1 tbsp oil
-
1 chopped onion
-
1/2 tbsp coriander powder
-
1/2 tbsp garam masala
-
1 1/2 cups water
-
1 cup cous cous roasted
-
1/2 cup cashews
-
1/2 cup dried apricots and dried cranberries
-
Salt and pepper
Directions:
Fish:
- Heat mustard oil. Lower heat and fry onion seeds for 2 minutes. Add onion, garlic, ginger and sautee for another 5 minutes. Add turmeric, ground coriander and garam masala and coconut and cook for another 3 minutes
- Add cooked spices to yogurt. Add salt
- Pour marinade over salmon steaks and bake in hot 400 degree oven for 9 minutes
Couscous Medley
- Heat oil. cook chopped onion Add coriander powder and garam masala - cook for 2 minutes
- Add water and simmer for 10 minutes
- Add couscous and cover
- Add cashews, apricots and cranberries
- Add salt and pepper
