Rainbow Sweet Rice

Ingredients

  • 1 Tbsp Olive Oil
  • 1 Tbsp Sesame Oil
  • 1 Cup Onions, Chopped
  • 1 Cup Red Bell Pepper, Chopped
  • 1 1/2 Cups Basmati Rice
  • 2 1/2 Cups Stock
  • 1 Cup Unsweetend Coconut Milk
  • 1/2 Cup Apple Juice
  • 1/4 Cup Compliments Organic Smooth Peanut Butter
  • 1 Tsp Turmeric
  • 1 Tsp Cinnamon
  • Salt And Pepper To Taste
  • 1 Banana, Chopped
  • 1/2 Cup Peas
  • 1/2 Cup Raisins
  • Chopped Peanuts
  • Fresh Coriander

Directions:

  • In In a medium saucepan sauté the onions in the olive oil and sesame oil until soft. Add the red pepper and cook for another w to 3 minutes.
  • Add the basmati and coat well with the onion and pepper mixture. Add the stock, coconut milk, apple juice, peanut butter, turmeric, cinnamon and salt and pepper and bring to a boil. Then reduce to a medium-low heat and add the banana, peas and raisins. Cook for 20 to 25 minutes, until the rice is cooked.
  • Transfer to platter. The kids are going to love this one.
