Rainbow Sweet Rice
Ingredients
- 1 Tbsp Olive Oil
- 1 Tbsp Sesame Oil
- 1 Cup Onions, Chopped
- 1 Cup Red Bell Pepper, Chopped
- 1 1/2 Cups Basmati Rice
- 2 1/2 Cups Stock
- 1 Cup Unsweetend Coconut Milk
- 1/2 Cup Apple Juice
- 1/4 Cup Compliments Organic Smooth Peanut Butter
- 1 Tsp Turmeric
- 1 Tsp Cinnamon
- Salt And Pepper To Taste
- 1 Banana, Chopped
- 1/2 Cup Peas
- 1/2 Cup Raisins
- Chopped Peanuts
- Fresh Coriander
Directions:
- In In a medium saucepan sauté the onions in the olive oil and sesame oil until soft. Add the red pepper and cook for another w to 3 minutes.
- Add the basmati and coat well with the onion and pepper mixture. Add the stock, coconut milk, apple juice, peanut butter, turmeric, cinnamon and salt and pepper and bring to a boil. Then reduce to a medium-low heat and add the banana, peas and raisins. Cook for 20 to 25 minutes, until the rice is cooked.
- Transfer to platter. The kids are going to love this one.
