Pasta With Garlic & Goat Cheese
Ingredients
- 1 Lb Compliments Fresh Dried Penne Or Bow Tie Pasta
- 3 Tbsp Olive Oil
- 6 Cloves Garlic, Chopped
- 1 Small Red Bell Pepper, Chopped
- 1 Small Red Onion, Chopped
- 1/2 Cup Vegetable Stock
- 1/2 Cup White Wine
- 2 Tbsp Lemon Juice
- 1/2 Tsp Black Pepper
- 1/2 Tsp Dried Basil Or 2 Tbsp Chopped Fresh
- 1/2 Tsp Dried Thyme Or 2 Tbsp Chopped Fresh
- 1/2 Tsp Sea Salt
- 3/4 Cup Compliments Goat Cheese, Crumbled
Directions:
- Bring a large pot of salted water to a boil. Cook the pasta for 8 - 10 minutes, or until al dente.
- While the pasta is cooking, heat the oil in the pan. Sauté the garlic, red bell pepper, and onion for about 2 minutes. Add the remaining ingredients. Except the goat cheese. Sauté for about 5 to 6 minutes.
- Drain the pasta. Mix it into the sauce. Stir the goat cheese into the pasta. Serve immediately.
Variation:
- Replace the goat cheese with feta.

- Use low-fat soup stock and low-fat goat cheese.
